FAMILY

" I seem to have started a tradition "

Our winters are long and cold here in Northern Maine. The kids are busy with Christmas Balls, then comes ski-team and basketball, cheering (all my nieces and nephews are involved in one way or another) But about mid February everything starts to die down except for recreational sking.

Last year we spent our weekends at our camp where there's lots of snowmobiling, snowshoeing, and ice fishing. I started inviting family up on Sundays for a big dinner. I so enjoy cooking, and love to have company.

Well I've been thinking about it lately and the kids are almost done with there sports for the season, so I'm thinking a turkey dinner in a couple weeks (I still have a couple turkeys in the freezer)

I think we'll make this a NEW TRADITION.

Good evening everyone. Well I'm back to my little homestead for a few days. The chickens were really glad to see me, when I'm home for a few days they get to free range. A few weeks ago the raccoons had a feast, I'm down to only 5 hens, 1 rooster and 2 chicks (oh and 3 less racoons) I've decided I would like to take the chickens to the lake with me. We've bought a little coop from Tractor supply, and have it all put together. The only problem I have a rooster!! Not so sure the neighbors will like a rooster so trying to find him a home, then the girls will be going with me.

Home for a couple days helping my Dad move into his new home, and while I'm here I will be restocking the pantry.

Tomorrows list: Help Dad in the morning
: Blanching and freezing corn in the afternoon.
While I'm home I'm Hoping to pick up a case of locally grown broccoli to put in the freezer.

So far this summer I've put up 40 pints of fiddleheads
30 pints of green and yellow beans
12 pints of carrots
15 pints of peaches
20 Quarts dill pickles
10 jars of relish
A bunch of different jams. Blueberry, strawberry, raspberry, Strawberry rhubarb, lemon marmalade, oh and I learned to make clover honey. I think I did 12 1/2 pints of honey.

Even though I've been spending a lot of time at the lake I'm still really busy when I'm home. After all we still have to eat.

Well that's it for this evening, hope you all had a wonderful Holiday weekend.

Hi ladies it has been a while.

I've been pretty occupied with a new lifestyle. I still have my little homestead under the windmills, my garden, my chickens. I'm still canning, making soap and all the things that come with homesteading. The difference is I'm doing a lot at the lake.

My husband and I have purchased a little cabin on a lake about 45 minutes from our home. I've been spending most of my time there. Life seems to slow down when you get to the lake and I am very much enjoying it.

My plan is to get back on track with posting information on homesteading basics. but for today just wanted to let you know I was still here and enjoying my summer at the lake
I know you haven't heard from me in a while so I'm going to just fill you in on what I've been up to.

First: We bought a camp on a lake, I'm planning to have some pictures to post later, anyway the camp is a little bit of a fixer upper. So our weekends have been spent working on the camp because as soon as all this snow is gone I plan to be working on the outside. I've been mapping out in my head the flower beds, herbs, and a few veg. It's only a 45 min. drive from our house so it's not unusual for my husband to sit down at 8:00 in the evening and say lets head to camp for the night, you don't have to ask me twice it usually takes me about 10 minutes to get ready. We are really enjoying our new camp.

Second thing that has been keeping me busy are my grandparents, they now need 24 hour care so between staying with them, cooking meals and running to Dr. appointments my life has been pretty busy.

Not only have I been slipping on my blog but my food storage has dropped way down. We have been eating out of it all winter plus I've been preparing a lot of meals for my grandparents from my own storage. So that is what I need to work on. I did purchase 25lbs of sugar a couple of weeks ago. I think by the looks of my flour bin that will be my next purchase. Then I will start watching the local sales flyers. When pasta is on sale 10 for $10 I will be buying ten. I will make a few purchases like this until I'm stocked back up. My meat is holding out but considering I started the winter with half a pig, 1/4 of a cow and 11 turkeys we have really made a dent in it.

I don't know about you but I am so looking forward to spring and getting my gardens started, but when I look out my window and see all the snow, I guess I'll just throw another log on the fire and save my day dreaming for another day.

Well ladies I need to end my post for today as I'm headed to our local food pantry to volunteer this evening.
Happy Holidays

Hope everyone had a wonderful Christmas. We spent Christmas night with my son it was a wonderful visit but I was feeling horrible and was running a fever. Today is much better. I decided I would just stay in my P.J's all day and relax, and that I did. I must say "I am feeling 100% better," sometimes we just need to slow down.

The ski-area is in full swing. I've chose not to work much at the mountain this winter. maybe I'll be doing a little sking (Grin) Anyone who knows me well knows it's hard to get those skis on my feet, don't get me wrong I love to ski, I grew up living at the mountain(Because my family owned it) but as I get older I hate the cold. These days a nice warm fire and a cup of hot cider is what I enjoy.

The chickens and turkeys are still keeping me busy. Egg production is way down because our days are so short. The week before Christmas I actually had to buy eggs at the store. Please don't tell my husband as feed is still costing about $15 a week, and turkeys? yes we still have turkeys, I kept three of a breed that are able to reproduce but it seems you need to have at least one female in order for this to happen. Guess what? I have three toms so the freezer will soon be there resting place.

We are expecting a big snowstorm starting tomorrow going into Friday so I will need to get up early, get to town to check on my grandparents then home to snuggle in to a nice warm home for a couple days. I just love being stuck at home in a snowstorm, a couple more days to rest(smile) 12 to 14 inches is expected in this storm. Maybe I'll do a little cooking.

Hope everyone is enjoying this holiday season with friends and family. I'm looking forward to 2013.

Happy New Year and God Bless You and Your Families

I'VE BEEN MISSED

Thank you for the messages and emails from my wonderful followers who have missed me. I don't know how much I'll be back but for right now I'm here.

Life has been busy. It started this past summer with my grandparents returning from Florida. I try to visit every day, and maybe cook them a treat sometimes. Today It was pumpkin pie with real whipped cream(yum) I don't have any pictures to show you but I do have a recipe.

First I cut up a very large pumpkin I grew myself(I'm so proud of my big pumpkins) I peeled and cut the pumpkin in chunks. Then I boiled it in just a little water till it was fork tender. Then I blended it until it was smooth with a stick mixer. ( I got 14 pints of cooked pumpkin from one pumpkin, which I froze)

Then I mixed: 2cups pumpkin, 2 eggs, 1 cup brown sugar, 2 Tlbs. flour, 1/2tsp salt, 2 1/2tsp pumpkin pie spice, 12oz milk. Pour in a prepared pie shell, Bake 450 for 10min, then turn down to 350 and cook another 55 min. This recipe makes one pie I doubled it for two. One was a little deeper and took about ten minutes more to cook.

The end result was really good, plus I've got more pumpkin in the freezer, maybe I'll make some pumpkin chip cookies next.

Well ladies I need to go get wood in the fire as it's suppose to be down to 17 degrees this evening. The joys of living in Northern Maine but I wouldn't change it for anything.

Hugs for now

Fall Has arrived

Good afternoon, It's been awhile but I'm back.

The last post I did was almost a month ago and I think I made the statement I was almost done canning. Well I lied (grin) The fresh fruits and veg. just keep showing up on my doorstep. How does that saying go? Get all you can and can all you get!

Today I'm doing some apples my Aunt brought me. Thank you Aunt Joy. I've started with a batch of applesauce and apple bread. When I get some more time I will be canning the rest. I also canned apple butter a couple weeks ago and it came out great.

Homemade applesauce

Since my last post all the turkeys have gone except three. There souls have gone to a peaceful place because they led a good life, but there body's have gone in the freezer.(smile) We will be having one for supper tonight.

I've also been decorating for fall. I just love this time of year with all the fall colors, cool nights with a cozy fire. The leaves on the mountain are changing, and my pumpkins weigh about 40lbs.

This afternoon I'm going to a baby shower. I like the fall theme so I've made a diaper cake for fall. It's a little costly but so easy to make. This one took about 60 step 1 diapers.

I just roll each one and wrap with an elastic. Three rows on the bottom, two on the second and one on the top tier. Secure each row with a large elastic. Then I cover the elastics with ribbon secured with small safety pins, and decorate. Real easy and such a presentation.

Well I hope everyone is enjoying these beautiful fall days. I need to head out now as I have a baby shower to attend.

Hugs

Fall Is Just Around The Corner

Good afternoon. Well the evenings are getting cool and the leaves are starting to change. Summer is slowly coming to an end, even though I hate to see it end (So do the dogs) I do love fall. Our leaves are beautiful here the end of Sept, and all the pumpkins and fall decor. The smell of the wood stove on a cold evening. I guess I can let go of summer.(grin)

Getting ready for the weekend

Rain, Rain, and boy do we need it. I've been spending the day getting ready to go camping with family in Harvey New Brunswick.

I've been cooking, packing, cleaning, and did I mention cooking(smile)

My niece requested fudge so that's done. I also made mini blueberry cakes and these chocolate covered saltines. They are so easy and they are wonderful. The kids will love them.

You just arrange your crackers on parchment paper on a cookie sheet.

Melt 1 cup of butter, with 3/4 cup of brown sugar. Boil for 3 min. Then pour over the crackers. Put in the oven on 350 for 5 min.

Sprinkle 12 oz of chocolate chips over the top. wait 5 minutes for them to melt then spread with a knife. Let cool until chocolate hardens. Break into pieces and enjoy.

Jelly and Basil

Good afternoon, and a very warm afternoon. I was suppose to take the dogs to the vet, but the only car I had has no air conditioner, to hot for the baby's today so it gave me a little extra time for a post. A couple days ago I came across a recipe for Garlic, Rosemary jelly. I think it was on Fayes blog "The Blessed hearth" I'm sure it's wonderful but I came across one in the Ball Blue Book and I had all the ingredients.

Do you have a Ball Blue Book? If you don't you need to get one. I've got three, one is very old. I believe you can pick them up at Walmart.

Anyway "jelly" I think I'm going to eat mine with cream cheese on crackers. It came out so good.

1/4 pound garlic hand full of rosemary

2 cups vinegar 5 cups sugar

1 pouch liquid pectin

Roast garlic for 10 minutes, peel, and puree with rosemary and 1/2 cup vinegar. Combine garlic 1 1/2 cup vinegar and sugar in a large pot. Bring to a boil stirring constantly. Stir in pectin. Return to a hard boil for one minute. Ladle hot jelly into jars, adjust caps and process 10 minutes.

Now it's time to start thinking about supper before my husband gets home. Last night we had new potatoes, new beans and pork chops. I think tonight I will combine it all into a cassarole with lots of cheese, and this time of year we always have sliced cucumbers and tomatoes out of the garden. Guess it's time for me to go I'm getting hungry.

Hope you all have a wonderful evening.

Sorry I've been gone so long. It's been a busy summer, we've been tenting every weekend, there's been reunions canning, helping my grandparents, and the fair.

First of all check out these turkeys. They are getting so big, and they've been a lot of fun. They are a lot different than the old hens. They follow me every where. When I pull in the yard they come running. The downfall they poop all over the yard, and it's way cheaper to just go to the grocery store and buy a turkey, but this way I know where my food is coming from and I know I'm able to raise my own.

Summer Is Busy

Good evening ladies. We've had a wonderful summer in Northern Maine, with temps in the 70's and 80's.

It's been a busy summer with my grandparents moving home from Florida. I start my days out going to get there breakfast, then preparing there lunch and supper. This usually consumes my mornings.

This week my Uncles garden is ready for picking so I've started with peas and green beans. I've dug out the canning jars and canner. I'm now praying for rain tomorrow so I can stay inside and start canning(smile)

Also next week is our local fair so I've been preparing my entries of canning and baking. Keeping my fingers crossed for a few ribbons to add to my collection.

Well ladies another day is coming to an end just wanted to write a little post to let you know I have not forgotten you. Hope you are all having a wonderful summer.

Just wanted to get some pictures posted. Gotta go it's getting dark, need to get the chickens in as I'm still fighting with a coon.

Screams in the night

I don't know if I should say good evening or good morning, because it's about 2 a.m.

About an hour ago I was resting peacefully when I was waken by an awful noise in the backyard. I don't know who jumped out of bed quicker me or hubby, but those great watch dogs never said a word.(grin)

We had a coon get into the turkey pen a couple nights ago and we lost one turkey so we had secured all the coops.

I grabbed the flash light and ran down back. No shoes. I followed the feathers down through the woods. At some point I had to stop because my husband was yelling and I couldn't hear him. I stopped looked around thick in the woods I was standing on the old dump from when there was another house here like 100 years ago.

O.K it's the middle of the night I'm standing in the woods on broken glass in my bare feet and there's a man standing in my backyard yelling at me trying to tell me" There's no way it's a turkey or chicken the coops are all secure." Sure that coon must have hauled off a screaming pigeon!!

I finally had to give up and go back up to the yard. I checked all three coops, and counted heads. Don't know what good that does I don't even know how many I have (except the turkeys) I went back and checked the feathers. Red and White!! I must have left one of my laying hens out because my in-laws were here when I locked them up this evening and I didn't double check.

So here I sit in the middle of the night wide awake with one less hen and dirty feet. The Homesteading Life is always fun.

Well people that's enough excitement for one day.

Good night all or should I say Good morning(smile)

This weekend was our 29th anniversary and what better way to spend it than with friends and family. We rented a sweet little cabin In Green Land Cove. Right next door to where my husbands brother and his family were camping. I took The jet-ski Friday afternoon, then my husband showed up Friday night with the boat and KENTUCKY FRIED CHICKEN" what?! That is not local food" We are only eating local food and whats in our pantry for six months. The kids loved the chicken and mashed potato's so I guess there's one of my 5 exceptions for the month.

This morning we got up early because check out was at ten. I came home with a wicked craving for chocolate. I decided on homemade cream filled chocolates. Just one problem the recipe calls for sweetened condensed milk. I didn't have any and I can't buy any because it's not local. I still want chocolates so I googled it. Guess what, I can make sweetened condensed milk and it's easy.

simmer on very low until it thickens. (about 2 hours) when it's at desired thickness add 3 T. butter and 1 tsp. vanilla. that's all there is to it. No need to buy canned again.

Eating Local

Happy 4th of July everyone!

We started our journey on buying local food, however we have decided to change it to buying food from Maine because we have an older gentleman from down on the coast who comes up and sells seafood, which we very much enjoy and we're supporting the person we're buying it from. Also we travel down state a lot and it's so hard to pass those road side stands with fresh fruits and veg's. I'm still talking with in a 3 hour range so that's still local.

That said for the next six months we will only be buying local food and eating from the pantry. So far it's been easy, a little more thinking ahead and making sure I've taken something from the freezer but not hard. Now we are allowing five things a month that are not local in case I need flour, sugar, oil etc.

Last night we had grilled hamburgers(local grown beef out of the freezer) and new potato's and peas from a local farmer and strawberry glaze pie(yum) Strawberries I picked.

Today we will be traveling so I made a batch of brownies and we're taking crab meat sandwiches (crab meat from the man who sells fish, bread from a local bakery. Yes I normally make my own bread but have been very busy)

So we've started wish me luck (smile)

Hope you all have a wonderful day.

Pen Pals

Another cold rainy day. It's the end of June and we have a wood fire, but is so cozy.

I've just been sitting here thinking I haven't written to or heard from my pen pal in a long time. She had moved a couple of times and I'm guessing shes forgotten about me. I love having a pen pal we send each other little gifts from where we live, Years ago I had a pen pal from China, she sent me pictures, coins, and when I got married at 18 she was very concerned that I might be with child(Smile) I didn't have a baby until 8 years after I was married. She was my age but just started dating in groups, and here I was getting married. Well that was 29 years ago but I still have the pictures and coins she sent me.

I thought what better way to find a pen pal than my blog.

If your interested in a pen pal. Join my blog and leave a message to this post with your name, address and your interest. Hopefully someone will write to you or you can write to someone with similar interest.

Hope everyone has a wonderful evening, and if your in the North East try to stay dry(smile)

The Count Down Begins

Hi everyone, well the rain held off today but I have a feeling it was just building up. The weather man is calling for heavy rains tonight and tomorrow. I'm o.k with that it's a good excuse to get some work done inside.

Well my count down has begun only six more days until we start only buying local food. For six months we will be eating from our pantry and locally produced food. I'm excited and I like a good challenge.

Even though I'm excited about doing it, and my husband is about 85% on board you would not believe the people that are questioning me about doing it. Some have laughed at me, some think I'm crazy, some have even given me a hard time about it. I don't think I should have to answer to anyone about where I buy my food, but just so everyone knows it's my way of helping our local farmers. Why would you buy strawberries from another state when they grow right here? It's also for me, a challenge, a goal, something to work towards. It's going to be a challenge in itself but with people questioning me it makes me more determined to follow through. That's just who I am(smile)

Well I hope you will all be following me over the next six months. How about if I challenge you to only buy local for one week could you do it?

Hope everyone has a great evening.

Hugs

This fudge is real easy just boil hard for 3 minutes 3cups of sugar, 3/4 cup of butter, 2/3 cup of milk. After 3 minutes remove from stove and mix in 12oz. chocolate chips and 1 tsp. vanilla. I pour mine in a pan lined with parchment paper. After about an hour it should be ready to cut. This a really smooth and creamy fudge.
Life Is Busy

Wow have I been busy!! As you can see I haven't posted in a week.

Just wanted to tell you all a little about what I've been up to. First the turkeys are growing sooo fast, and eating so much feed, If they continue at this rate they won't be long for the freezer.(grin)

The gardens are all in and doing well. We have growing- cucumbers, beans, dill, swiss chard, carrots, pumpkins and squash. The strawberries I planted are doing well but only a few blossoms, hopefully they'll winter well and produce a larger crop next year.

Also my grandparents are moving home from Florida, a lot to do to get ready. I will be busy with them helping with house work and meals. I can't wait it's been a year since I've seen them.

Tomorrow night I will be having a Keepers meeting here at my home. I know at least 16 people who are coming. I'm real excited Julie and I will be teaching everyone how to make bread, and goats milk soap. Can't wait!!

Last of all I've been working on my challenge, my husband is even up for it, but I've changed it from one year to just six months. So starting July1st until Christmas we will only be eating local food. We've been planning it all out. I have cheated a little I bought some extra things I needed for canning, but over all I think we're ready. So bring it on July 1st!!!!! Oh ya did I mention that's also my birthday(smile)

Well that's my week whats been happening on your homestead?

Pictures will be taken tomorrow night of our bread making so check back and see how we made out.

Hope everyone has a great evening.

Eating Local

Good morning everyone its a chilly day in Northern Maine, even thinking about starting a little fire.

I've stumbled across an article about a couple who took on the challenge of only eating local for one year. The article says if every person in the country ate one local meal a week, it would save1.1 million barrels of oil a week. Plus you've got security of your food supply and your supporting your local economy.

I've decided to take on the challenge. EAT LOCAL FOR ONE YEAR.

I will start July 1st on my birthday. My husband is going to be my biggest struggle he told me we had to have a years worth of A-1 steak sauce before July 1st(grin) I will be canning all my vegetables,Freezing and canning fruits. 1/2 cow will go in the freezer this fall and 13 turkeys. These are all things I normally do any way.

We have a local dairy that has milk, butter, lemonade and ice tea. These things I will be able to buy. I figure on the days I don't make bread I can buy from the local bakery. These are a few of the things I've been thinking about.

I am allowing myself 5 exceptions a month plus salt. I will need these for white sugar, Chocolate chips and other things for baking.

I'm real excited about this, and kinda wishing a few more will join me.

So I hope starting July 1st you will follow me on my journey of "Eating Local For One Year" I'm sure there will be lots of struggles along the way.

Well that's all for today. Hope you all have a wonderful afternoon.

Hugs
